A calmer start at the counter
Good preparation is less about little bowls and more about knowing what happens next.
Read for timing
Read the whole recipe before beginning. Notice which ingredient needs to be ready first and which step leaves you time to do something else. A sauce that simmers may give you a useful window for washing herbs.
Gather, then group
Put the ingredients and tools you will use within reach. Group ingredients that enter the pan together, while keeping anything needed for finishing separate. Keep raw ingredients that require separation on their own work surface.
Make a landing space
Leave a clear place for a hot pan and a bowl for trimmings. An uncluttered counter makes each small transition easier. When you finish a step, return ingredients you no longer need to their proper storage.
Try it tonight
Before your next familiar meal, spend two minutes reading and gathering. Afterward, note which missing tool interrupted you. Put that tool on your next preparation list.
